Wild Rice and Chicken Casserole

Ingredients

  • 1 6-oz. package Uncle Ben's Long Grain and Wild Rice
  • 1/4 cup butter or margarine
  • 1/3 cup onion, chopped
  • 1/3 cup flour
  • 1 tsp. salt
  • Dash black pepper
  • 1 cup half & half
  • 1 cup chicken broth
  • 2 cups cooked chicken, chopped
  • 1/3 cup parsley, chopped
  • 1/4 cup almonds, chopped

Directions

  1. Preheat oven to 425 degrees.

  2. Prepare contents of rice and seasoning packets according to package directions.

  3. Meanwhile, melt butter in large saucepan. Add onion and cook over low heat until tender. Stir in flour, salt and pepper. Gradually stir in half & half and chicken broth. Cook, stirring constantly, until thickened.

  4. Stir in chicken, parsley, almonds and cooked rice.

  5. Place in lightly greased 2-quart casserole. Bake, uncovered, in 425 degree oven for 30 minutes.
