Easy Chicken & Rice Wraps

Ingredients

  • 1 package Rice-a-Roni Spanish Rice
  • 2 tablespoons butter
  • 2 cups water
  • 1 jar (16 oz) salsa
  • 3 boneless, skinless chicken breasts, cut into strips
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 8 (6 inch) tortillas, warmed
  • Shredded Cheddar cheese
  • Sour Cream

Directions

  1. In a large skillet over medium-high heat, saute rice-vermicelli mix with butter until vermicelli are golden brown.

  2. Slowly stir in water, salsa, chicken and seasoning packet; bring to a boil. Reduce heat to low. Cover and let simmer 15-20 minutes or until rice is tender and chicken is no longer pink in the center.

  3. Stir in beans and corn; let stand 5 minutes. Serve in tortillas with Cheddar cheese and sour cream.
