Feijoada ( with meat )

Ingredients

  • 1 cup black beans
  • 1 tablespoon olive oil or any oil
  • 1 cube of beef bouillon
  • 2 1/2 cups H2O
  • 1 Bayleaf
  • 1 tablespoon vinegar or wine
  • 1/3 of a medium onion chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped green pepper (optional)
  • 1 pound of chuck roast or any cut of beef
  • 3 slices of bacon
  • 1/4 pound smoked sausage

Directions

  1. Combine onions, green pepper, black pepper, garlic, Bayleaf, wine, oil, Roast and bacon and brown for five minutes or less.

  2. Simmer for 20 to 30 minutes turning over the meat once in a while

  3. The add beans and H2O bring to a boil.

  4. Add bouillon after boil

  5. Let cook covered for 3 hours on medium heat.

  6. Add more H2O as needed.

    • to speed things up soak beans in H2O overnight
