English Muffin Breakfast Pizza

Ingredients

  • 4 eggs
  • 1/4 cup skim milk
  • Dash of salt
  • Dash of pepper
  • 2 teaspoons canola oil
  • 2 tablespoons onion, chopped
  • 2 tablespoons red bell pepper, chopped
  • 2 tablespoons cooked ham, chopped
  • 1/2 cup reduced fat Cheddar cheese, shredded
  • 2 whole wheat English muffins, toasted

Directions

  1. In a small bowl, beat egg, milk, salt and pepper with a wire whisk until well blended.

  2. In non-stick skillet, heat oil over medium heat. Cook onion, bell pepper, and ham in oil 3-5 minutes, stirring occasionally until vegetables are crisp-tender. Pour egg mixture into skillet. As eggs begin to set, gently lift cooked portions with spatula so the uncooked egg and flow to bottom. Cook 3-4 minutes or until eggs are thickened throughout but still moist; stir cheese into eggs.

  3. Spoon egg mixture evenly over muffing halves.
