Nacho Chicken Casserole

Ingredients

  • 2 cups cooked chicken, diced
  • 1/2 cup uncooked instant rice
  • 1 can diced tomatoes, drained
  • 1 can low fat, low sodium cream of chicken soup
  • 1 - 11 oz can whole kernel corn with red and green peppers, drained
  • 1 teaspoon taco seasoning mix
  • 1 1/2 cups reduced fat Cheddar cheese, shredded
  • 1 cup tortilla chips

Directions

  1. Heat oven to 350 degrees. Spray 2-quart casserole with cooking spray. In casserole, stir chicken, rice, tomatoes, soup, corn, taco seasoning mix and 1 cup cheese until well blended.

  2. Cover and bake 1 hour or until rice is tender and mixture is heated through. Top with tortilla chips; sprinkle remaining cheese on top. Bake until filling is bubbling and cheese is melted.
