Mini Lemon Tarts

So easily made with pre-baked sweet tart shells.
Yummy, deliciousness !

Prep time: 10 minutes
Cook time: 15 minutes
Serves 42 people

Ingredients

  • 1/4 C plain flour
  • 1 C castor sugar
  • 1/2 C lemon juice
  • zest 1 lemon
  • 3 eggs
  • 1 egg yolk
  • 1/8 T salt
  • pre-cooked mini sweet shortcrust pastry shells

Directions

  1. Combine flour and sugar, add lemon juice and zest.

  2. Whisk together whole eggs, egg yolk and salt.

  3. Combine all ingredients well.

  4. Pour into cold mini tart shells.

  5. Bake approx 15 minutes at 150oC, until firm.

  6. Dust with icing sugar to serve.

  7. Additional toppings:

  8. whipped cream and a fresh raspberry/strawberry
