Coconut, chocolate and banana mini muffins

Ingredients

  • 125g unsalted butter, melted, plus extra for greasing
  • 150g caster sugar
  • 3 ripe bananas, roughly chopped
  • 2 eggs
  • 1 tsp vanilla extract
  • 300g self-raising flour, sifted
  • 50g desiccated coconut
  • 100g milk chocolate chips
  • icing sugar, to dust

Directions

  1. Preheat the oven to 200˚C/fan 180˚C/gas 6. Grease 3×12-hole mini-muffin tins, with a little butter. Whizz the butter, sugar, bananas, eggs and vanilla extract in a food processor, until well combined.

  2. Put the flour, coconut and chocolate in a bowl, then fold into the banana mixture. Divide the mixture between the muffin holes. Bake for 15 minutes or until risen and golden.

  3. Cool slightly in the tin, then turn out onto a rack to cool completely Serve dusted with icing sugar.
