Strawberry Shortcake

Ingredients

  • Shortcake:
  • 2c flour
  • 1/2 c sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c butter/mar.
  • 3/4 c milk
  • 2 eggs slightly beaten
  • Fruit:
  • 4 c sliced strawberries
  • 1/2 c sugar
  • Topping:
  • 1 c whipping cream
  • 2 tbsp. powdered sugar
  • 1/2 tsp. vanilla

Directions

  1. Cake:

  2. Grease and flour round cake pan.

  3. Combine flour, sugar, baking powder & salt.

  4. Cut in butter until mix resembles coarse crumbs.

  5. Add milk and eggs just until moistened.

  6. Spoon into greased and floured pan.

  7. Bake at 375 for 25-30 minutes.

  8. Cook 10 minutes.

  9. Topping:

  10. Combine strawberries and sugar. Mix well and then refrigerate at least 30 min.

  11. Just before serving beat whipped cream until soft peaks form.

  12. Add in powdered sugar and vanilla.

  13. Beat into stiff peaks.
