Rum Raisin Rice Pudding

Ingredients

  • 1/2 cup raisins
  • 2 Tbsp. dark rum mixed with 2 Tbsp. water
  • 1 cup rice2 cups water
  • 4 cups milk
  • Cinnamon stick (about 2 inches)
  • 2 eggs lightly beaten
  • 1/2 cup sugar
  • 1 Tbsp. grated lime zest
  • Ground cinnamon to taste (optional)

Directions

  1. Soak the raisins in the rum mixture for about 6hours.
  2. Cook the rice in 2 cups water. In a large heavy pot, slowly heat the milk with the cinnamon stick until it approaches a boil.
  3. Remove from the heat and discard the cinnamon stick. Stir in the eggs, sugar, lime zest, rice, and drained raisins.
  4. Bring the mixture to a simmer over low to medium heat, stirring continuously. Cook for 3 to 5 minutes, or until thickened. Transfer to a bowl, cool for 15 minutes, and refrigerate. Stir with ground cinnamon, if using before serving.
