Steamed Christmas Pudding

Ingredients

  • 1/3 cup shortening
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 cup all-purpose flour, sifted
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. cloves
  • 1/4 cup milk
  • 1/2 cup candies cherries, chopped
  • 1/4 cup citron, chopped
  • 1/2 cup raisins
  • 1/2 cup nuts, chopped
  • 1 tsp. rum extract

Directions

  1. Cream shortening and sugar thoroughly. Add eggs and beat well. Alternately add sifted dry ingredients and milk. Add fruits, nuts and flavoring. Mix well. Turn into a well greased 1 quart mold. Cover with foil. Pour 6 cups of water into pressure cooker. Set mold on top of rack, cover cooker and allow a small stream of steam to escape from the vent tube for 2 1/2 hours. Do not use control. Remove cooker from heat. Let stand for 5 minutes, and then open.
