Zippy Corn Pudding

Ingredients

  • 2 Tbsp. butter, melted
  • 2 Tbsp. flour
  • 1 1/2 cups evaporated milk
  • 2 1/2 cups creamed corn
  • 2 tsp. finely chopped scallion
  • 1 tsp. finely chopped jalapeno
  • 1/2 tsp. minced garlic
  • 1 1/2 tsp. baking powder
  • 2-3 dashes each salt and pepper
  • 4 well-beaten egg yolks

Directions

  1. Combine melted butter and flour. heat on low for 1 minute, stirring constantly.
  2. Whisk in evaporated milk until smooth. Remove from heat. Add creamed corn, scallion, jalapeno, garlic and baking powder. Season with salt and pepper to taste. Fold in egg yolks.
  3. Butter a 1 1/2 quart shallow baking dish. Dust well with corn meal. Pour in corn mixture. Place on rack on baking tray. Bake at 350 degrees for 40-45 minutes. Cool 5 minutes. Serve as a side dish.
