Apricot Patries ( Pastelitos de Albaricoque)

Ingredients

  • 1 cup water
  • 1 cup dried apricots
  • 1/2 cups sugar
  • 1/2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 3/4 tsp. salt
  • 1/2 tsp. baking powder
  • 2/3 cup lard or butter
  • 4 to 6 Tbsp. ice cold water
  • Confectioners' Sugar Glaze:
  • 1 cup confectioners' sugar
  • 1/2 tsp. vanilla extract
  • 3 Tbsp. milk or cream.

Directions

  1. In a medium saucepan, bring water and apricots to boil and cook 20 minutes. Cool and process in a blender until smooth. Return to saucepan, add sugar and cook another 5 minutes, or until thick. Cool slightly and stir in vanilla.
  2. In a mixing bowl, combine flour, salt and baking powder. Cut in butter until crumbly. Add water, 1 Tbsp. at a time, tossing mixture with a fork until it holds together.
  3. Divide dough in half. Roll each half to a 14 by 10 inch rectangle on a lightly floured surface. Line a 10 × 13-inch pan with one of the rectangles. Spread the apricot mixture evenly to allow steam to escape while cooking.
  4. Bake at 400 degrees for 25 minutes until lightly browned on the edges. Cool slightly, top with glaze and cut into squares.
  5. Confectioners’ Sugar Glaze:

  6. In the small bowl of a mixer, combine confectioners’ sugar, vanilla and milk. Blend until smooth and spread on bars.
