Greek-Style Pasta Salad

Ingredients

  • Salt and pepper
  • 1 lb. bow-tie pasta
  • 1/4 cup red wine vinegar
  • 1 Tbsp. Dijon mustard
  • 1/2 cup olive oil
  • 2 cups cherry tomatoes, halved
  • 1 small cucumber, peeled, halved lengthwise, seeded, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup chopped pitted Kalamata olives
  • 4 oz. feta, crumbled
  • 2 Tbsp. chopped parsley

Directions

  1. Bring a large pot of salted water to a boil and add pasta; cook until al dente, about 10 minutes or a package label directs.
  2. While pasta is cooking , whisk together vinegar, mustard, 1/4 tsp. salt and 1/8 tsp. pepper in a large bowl. Continue to whisk while adding oil in a slow stream. Dressing will thicken.
  3. Drain pasta and add to bowl with dressing. Mix well. Stir in tomatoes, cucumber, onion, olives and pepper. Just before serving, toss with parsley.
