  • 1/2 cup all-purpose flour
  • 1 tsp. curry powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking powder

  • 1/4 cup whole-wheat flour
  • 1/3 cup water
  • 1/2 tsp. garlic
  • 1/2 tsp. turmeric
  • 1/2 tsp. cumin
  • 2 or 3 Tbsp. curry

Directions

  1. Heat oil in a deep fryer.
  2. In a large bowl, combine the flour, curry powder, salt, baking powder, and water to make a smooth, thick batter. If necessary, add more water 1 to 2 Tbsp. at a time. Mix well.
  3. Coat cauliflower pieces with batter.
  4. Fry cauliflower pieces one at a time to avoid them sticking to each other. Drain well.
  5. For the gravy:

  6. Heat enough oil to coat a skillet over medium heat. Saute the onion and cayenne peppers in oil. Stir in the flour, making sure the flour is thoroughly coated with oil, then whisk in the water, garlic, turmeric, cumin and curry. Stir well until gravy is creamy . Add the fried cauliflower to the gravy and stir to coat well.
