Holiday Poke Cake

Ingredients

  • 1 (18.5oz.) white cake mix
  • 2 cups boiling water, divided
  • 1 (4 serving size) pkg. Jell-O, any red flavor
  • 1 (4 serving size) pkg. Jell-O lime flavor
  • 1 (16oz.) can vanilla Frosting supreme

Directions

  1. Heat oven to 350 degrees.
  2. Bake and cool cake mix as directed on package for 2 (9-inch) round cake layer.
  3. Place cake layers, top sides up, in 2 clean 9-inch round cake pans. Pierce cake with large fork at 1/2-inch intervals.
  4. Stir 1 cup of the boiling water into each flavor of gelatin in separate bowls, 2 minutes or until dissolved.
  5. Carefully pour red gelatin evenly over 1 cake layer and lime gelatin over second cake layer. Refrigerate 3 hours.
  6. Dip 1 cake pan in warm water 10 seconds; unmold onto serving plate.
  7. Spread with about 1/4 of the frosting.
  8. Unmold second layer; carefully place on first frosting.
  9. Refrigerate cake for 1 hour or until ready to serve. Decorate as desired.
  10. Store leftover cake in refrigerator.
