Pork with Sweet Potatoes and Peppers

Ingredients

  • 2 red bell peppers, cut into chunks
  • 1 large sweet potato, peeled and cut into 1-inch pieces
  • 1/2 lb. gold or red potatoes, scrubbed and quartered
  • 1 to 2 cloves garlic, minced
  • Olive oil
  • Salt and ground black pepper
  • 1 pork tenderloin
  • Fiesta Citrus Seasoning

Directions

  1. Heat oven to 425 degrees. Line a rimmed baking sheet or shallow roasting pan with foil.
  2. In a medium bowl, combine the bell peppers, sweet potato, regular potatoes and garlic. Drizzle with olive oil and season with salt and pepper.
  3. Arrange mixture on one half of the prepared baking sheet. Lay pork tenderloin on the other half. Drizzle pork with oil and sprinkle generously with Fiesta Citrus Seasoning.
  4. Roast, stirring vegetables occasionally, until vegetables are golden brown and tender and pork reaches an internal temperature of 145 to 150 degrees, about 40 minutes. Let pork rest 5 minutes before slicing.
