Angel Pecan Pie

Ingredients

  • 1/2 tsp. cream of tartar
  • 3 egg whites
  • 1 cup sugar
  • 1 tsp. vanilla
  • 16 saltine crackers, crushed
  • 1 cup chopped pecans
  • Cooking spray
  • Cool Whip, thawed
  • Flaked coconut, optional

Directions

  1. Add cream of tartar to egg whites; beat until frothy. Add sugar and vanilla. Beat until thick. Fold in crackers and pecans. Pour into deep dish pie plate that’s been sprayed with cooking spray
  2. Bake at 350 degrees for about 30 minutes. Do not let it get too brown on the bottom. Cool. Middle will cave in after cooling.

  3. Top with Cool Whip and flaked coconut, if desired. This is best if served after being refrigerated for at least 3 hours.
