Herbed Meatballs

Ingredients

  • 1/2 cup frozen chopped onion
  • 1 tsp. minced garlic
  • 1/2 cup sliced mushrooms
  • 1 1/2 cups no-sugar-added, low sodium tomato pasta sauce
  • 1/2 lb. ground turkey breast
  • 1/2 Tbsp. fennel seeds
  • 2 Tbsp. plain bread crumbs
  • 2 Tbsp. balsamic vinegar
  • Salt and ground black pepper

Directions

  1. Place onion, garlic, mushrooms and pasta sauce in a medium skillet and bring to a simmer. Cover and cook gently for 5 minutes while you prepare the meatballs.
  2. Mix turkey, fennels seeds, bread crumbs and balsamic vinegar. Roll into small meatballs, about 1 1/2-incjhes in diameter. You should have
  3. 8 meatballs.. Add meatballs to the skillet and simmer, covered, 5 minutes. Turn meatballs over and cook, covered another 3 minutes or until meatballs reach an internal temperature of 165 degrees. Taste sauce and add salt and pepper, if needed. Serve meatballs with lentils.
