Avocado Deviled Eggs

Ingredients

  • 6 hard-cooked eggs, peeled and cut lengthwise
  • 1 ripe avocado peeled, pitted and roughly chopped
  • 1 tsp. lemon juice
  • 1 Tbsp. mayonnaise OR plain yogurt
  • 2 tsp. mustard (1 used maple mustard)
  • 1 tsp. white wine vinegar
  • Salt and ground black pepper to taste
  • 1/8 to 1/4 tsp. ground red pepper (cayenne)

Directions

  1. Remove egg yolks to a medium bowl. Place egg whites on a plate or platter.
  2. To the bowl with the egg yolks, add the avocado and lemon juice and mash until smooth.
  3. Stir in the mayonnaise (or yogurt), mustard, vinegar, salt and peppers; mix thoroughly. Spoon into egg-white shells, dividing equally. Serve immediately or cover lightly with plastic wrap and refrigerate for up to 3 hours.
