Ingredients
- 6 hard-cooked eggs, peeled and cut lengthwise
- 1 ripe avocado peeled, pitted and roughly chopped
- 1 tsp. lemon juice
- 1 Tbsp. mayonnaise OR plain yogurt
- 2 tsp. mustard (1 used maple mustard)
- 1 tsp. white wine vinegar
- Salt and ground black pepper to taste
- 1/8 to 1/4 tsp. ground red pepper (cayenne)
Directions
- Remove egg yolks to a medium bowl. Place egg whites on a plate or platter.
- To the bowl with the egg yolks, add the avocado and lemon juice and mash until smooth.
- Stir in the mayonnaise (or yogurt), mustard, vinegar, salt and peppers; mix thoroughly. Spoon into egg-white shells, dividing equally. Serve immediately or cover lightly with plastic wrap and refrigerate for up to 3 hours.
