Angel Hair Pasta with No-cook Tomato Sauce

Ingredients

  • 8 oz. angel hair pasta or thin spaghetti
  • 2 1/2 lb. tomatoes, coarsely chopped (6 cups)
  • 1 small onion, quartered
  • 1 cup lightly packed fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 medium garlic cloves, coarsely chopped
  • 1 tsp. fine sea salt
  • 1/2 tsp. black pepper
  • Dash crushed red pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 2 Tbsp. chopped Italian parsley

Directions

  1. Cook pasta according to package directions, reserving 1/2 cup of the pasta cooking water.
  2. Meanwhile, combiner tomatoes, onion, basil, oil, garlic, black pepper and crushed red pepper in large bowl. Pulse in batches, using food processor, until coarse puree forms. Pour into large bowl; toss with pasta, adding reserved pasta water if necessary. Sprinkle with cheese and parsley; toss to coat.
