Arizona Pasta with Chicken, Lime, and Cilantro

Ingredients

  • 2 Tbsp. butter or olive oil
  • 1 to 2 cloves garlic, minced
  • 2 small summer squash, such as zucchini, crookneck, or pattypan, trimmed and julienned
  • 1 cup heavy cream
  • 1 large red bell pepper, roasted, peeled, seeded and julienned
  • 2 Tbsp. fresh lime juice
  • 1 tsp. minced lime zest
  • 1/2 cup chopped cilantro leaves
  • 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3/4 lb. boneless, skinless chicken breast, cooked (preferably grilled) and cut into 1/4-inch wide strips
  • 3/4 lb. fettuccine or linguine, cooked, drained, and set side in a warm place
  • 1/2 cup grated Parmesan or Asiago cheese

Directions

  1. Heat the butter in a large skillet. Add the garlic and squash and cook over medium heat until slightly softened, about 3 minutes.
  2. Add the cream and bring to a boil. Stir in the bell pepper, lime juice, lime zest, cilantro, salt, pepper, and chicken. Continue cooking until heated through, about 1 minute. Add the pasta, toss to mix, and serve right away, accompanied by the Parmesan cheese on the side.
