Tilapia with Mustard Sauce

Original Recipe called for Catfish — I just layered the Tilapia to make it 1/2 inch thick

Cook time: 7 minutes
Serves 4 people

Ingredients

  • 8 fresh or thawed Tilapia fillets, layered to 1/2 inch thickness
  • 2 to 3 T. Dijon-style mustard
  • 4 lemon wedges
  • 1/3 cup chopped pecans, toasted
  • 2 T. chopped fresh chives or green onions

Directions

  1. Preheat the broiler

  2. Coat the rack of a broiler pan with nonstick cooking spray; set aside

  3. Rinse fish; pat dry with paper towels. Place fillets on the broiler pan rack.

  4. Season with salt and pepper to taste. Spread mustard on top of fillets.

  5. Broil 4 to 5 inches from the heat for 5 to 6 minutes or until fish flakes with a fork.

  6. Place each fillet on a plate with a lemon wedge.

  7. Sprinkle with pecans and chives.
