Ann’s Onion Quiche

Ingredients

  • 1 unbaked pie shell (9-inches)
  • 1 medium white onion, chopped and sautéed in butter
  • Fresh sliced mushrooms, sautéed in butter
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup grated Swiss cheese
  • 3 eggs
  • 1 1/2 cups heavy cream

Directions

  1. Heat oven to 350 degrees.
  2. Arrange pie shell in a 9-inch pie pan.
  3. Spread onions and mushrooms in pie shell. Sprinkle with grated cheeses.
  4. Beat eggs with cream to blend and pour into a shell. Bake 40 to 35 minutes.
  5. Serve warm or cold. Freezes well.
