Apple Pfannkuchen

Ingredients

  • 1 cup milk
  • 2 eggs
  • 2/3 cup flour
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. grated lemon peel
  • 2 Tbsp. butter, melted
  • Apple Filling:
  • 2 cups apples, thick-sliced
  • 3 Tbsp. sugar
  • 1/2 tsp. cinnamon
  • 2 Tbsp. butter or margarine

Directions

  1. Put milk, eggs, flour, sugar, salt and lemon peel into blender container. Cover and process at medium speed until well blended.

  2. Put butter into 9 inch pie plate. Bake in preheated 400 degrees oven for 30-35 minutes until puffy and deep golden brown. Put apple filling in center of Pfannkuchen. Serve immediately. Pancake will collapse shortly after removing from oven.

  3. Apple Filling: Process apples in food processor.

  4. Melt butter in a skillet. Add remaining ingredients. Cook over medium-low heat until apples are tender.
