Apple Floating Island

Serves 6 people

Ingredients

  • 2 cups milk
  • 2 Tbsp. cornstarch
  • 6 Tbsp. sugar
  • 2 eggs, separated
  • 1/4 tsp. salt
  • `1 tsp. vanilla
  • 1 1/2 cups unsweetened apple sauce

Directions

  1. Scald 1 1/2 cups milk in double boiler.

  2. Add cornstarch to 4 Tbsp. sugar and mix.

  3. Separate eggs, saving whites for meringue. Add yolks to cornstarch mixture with a little cold milk, and stir smooth, adding remainder of cold milk gradually.

  4. Add cornstarch mixture to hot milk and cook, stirring constantly, 10 minutes, or until thick. Remove from heat; add salt and vanilla. Chill.

  5. Fold chilled applesauce into chilled pudding before serving. Top with spoonfuls of sugar gradually. Sprinkle with cinnamon or nutmeg.
