Apple Rice Pudding

Serves 6 people

Ingredients

  • 1 cup rice
  • 1 Tbsp. salt
  • 8 cups boiling water
  • 2 eggs, separated
  • 3/4 cup sugar
  • 1/2 cup raisins
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 3 large apples
  • 1/4 cup butter, melted

Directions

  1. Wash rice and drain; boil in salted water until tender. Drain.

  2. Beat egg yolks, add sugar, raisins, cinnamon and salt.

  3. Pare and dice apples. Combine rice, eggs and apples. Add melted butter; mix thoroughly.

  4. Beat egg whites stiff but not dry. Fold into rice mixture. Pour into greased baking dish and bake in moderate oven (350 degrees) 30 to 40 minutes, or until apples are tender. Serve hot.
