Apple-Rice Pudding

Ingredients

  • 6 plain, unsalted rice cakes
  • 2 medium (1 lb.) Red or Delicious apples, cored and quartered
  • 1 cup apple juice
  • 1/3 cup non-fat dry milk
  • 1 large egg
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • Non-dairy whipped topping (optional)

Directions

  1. Preheat oven to 350 degrees.

  2. In a 1-quart oven-proof casserole break up rice cakes.

  3. In blender combine coarsely chopped apples, apple juice, dry milk, egg, cinnamon and vanilla. Pour mixture over rice cakes. Cover dish with foil.

  4. Bake 20 minutes at 350 degrees. Serfve warm with non-dairy topping and apple slices, if desired.
