Red Onion Potato Salad

Ingredients

  • 6 medium potatoes, peeled , cooked and sliced
  • 1 cup sliced celery
  • 1 cup thinly sliced red onion
  • 1/3 cup chopped parsley
  • 1/4 cup low-calorie Italian dressing
  • 3 Tbsp. wine vinegar
  • 2 tsp. salt
  • dash cayenne pepper

Directions

  1. In large bowl, combine hot potatoes with remaining ingredients.

  2. Refrigerate to chill.

  3. Tip: Marinate hot potatoes in dressing while they chill to bring put full flavor- you’ll need less dressing.
