Sesame Beef Stir-Fry

Ingredients

  • 2 tsp cornstarch
  • 1/2 cup beef broth
  • 4 tsp soy sauce
  • 1 tbsp minced fresh ginger
  • 1 garlic clove, minced
  • 1/2 lb beef top sirloin steak, thinly sliced
  • 2 tsp sesame seeds, toasted, divided
  • 2 tsp peanut or canola oil, divided
  • 2 cups fresh broccoli florets
  • 1 small sweet yellow pepper, julienned
  • 1 cup hot cooked brown rice

Directions

  1. In a small bowl, combine the first five ingredients until blended; set aside.

  2. In a large nonstick skillet or wok, stir-fry beef and 1 tsp sesame seeds in 1 tsp oil until no longer pink. Remove and keep warm.

  3. Stir-fry broccoli in remaining oil for 2 minutes. Add pepper; stir-fry for 4-6 minutes longer or until veggies are crisp-tender.

  4. Stir cornstarch mixture and add to the pan. Bring to a boil; cool and stir for 2 minutes or until thickened.

  5. Add beef; heat through. Serve with rice. Sprinkle with the remaining sesame seeds.
