Tabbouleh

Serves 4 people

Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 2 chopped tomatoes
  • 1 chopped onion
  • 4 scallions, minced
  • 2 cups parsely, minced
  • 1/4 cup fresh leon juice
  • 1/4 cup olive oil
  • 1 cup fresh mint, minced
  • salt and pepper to taste

Directions

  1. Add boiling water to bulgur, cover with tight-fitting lid and let sit for 30 minutes.

  2. Drain excess water, and add remaining ingredients to bulgur. Refrigerate.
