Mushroom and Spinach Couscous

Ingredients

  • 2 tsp olive oil
  • 1 medium garlic clove(s), minced
  • 5 oz portobello mushroom(s), stems removed, coarsely chopped
  • 2 cup spinach, fresh, stems removed
  • 1/2 tsp dried oregano
  • 1 1/3 cup uncooked couscous
  • 2 cup water
  • 4 oz reduced-fat feta cheese, approximately, or 1/4 cup

Directions

  1. Heat oil and garlic in a large skillet over medium-high heat. Add mushrooms and cook 1 minute.

  2. Add remaining ingredients, except cheese, and bring to a boil; cover and remove from heat. Let stand for 5 minutes; fluff with a fork and sprinkle with cheese. Yields about 1/2 cup per serving.
