App[le Tarte Tatin

Ingredients

  • 4 Tbsp. butter (1/2 stick)
  • 3/4 cup granulated sugar, processed in blender until superfine
  • 2 Tbsp. water
  • 4 Granny Smith or Jonagold apples, peeled, cored and quartered
  • Flour for dusting
  • 1/2 (17.3 oz.) pkg. frozen puff pastry, thawed (1 sheet)
  • Whipped cream, for serving, optional

Directions

  1. Heat oven to 400 degrees.

  2. Place a 7-inch skillet with an oven-proof handle over medium heat. Melt butter in skillet. Add sugar and water; cook, stirring often, for 2 minutes or until sugar is dissolved. Continue cooking for 5 minutes, or until syrup is light and golden.

  3. Add apples to pan and cook for 5 minutes. Let bubbles subside and arrange apples in a circular pattern, core side up.

  4. On a lightly floured surface, roll out puff pastry to 1/8 inch thickness. Cut pastry into a 9 1/2 inch circle and place over apples, tucking edge under.

  5. Bake 18 to 20 minutes or until pastry is puffed and golden. To serve, invert onto a plate and slice into wedges. Serve with whipped cream, if desired.
