Apricot Clafouti (French Custard and Fruit Dessert)

Ingredients

  • 1 lb. fresh apricots, sliced 1/4 inch thick
  • 1 cup half-and-half or whole milk
  • 2 large eggs
  • 3 Tbsp. Cognac
  • 1/3 cup granulated sugar
  • 1/2 cup less 1 Tbsp. all-purpose flour
  • Freshly grated nutmeg
  • sifted confectioners' sugar, for dusting

Directions

  1. Preheat oven to 350 degrees. Butter 1 quart shallow baking or gratin dish and arrange apricots over the bottom.

  2. In a blender or food processor, combine half-and-half, eggs, cognac and sugar. Add flour and blend until smooth. Pour the mixture over apricots.

  3. Grate the nutmeg over the custard and bake in the center of the oven for 30-35 minutes, or until clafouti is golden and puffed. Allow to cool for 5 minutes. Sprinkle heavily with confectioners’ sugar and serve.
