Bacon-Beef Succotash

Serves 6 people

Ingredients

  • 6 slices bacon
  • 1 medium onion, chopped
  • 1 lb. lean ground beef
  • 1 cup well-seasoned beef broth
  • 1 can (17 oz.) whole-kernel corn, drained
  • 1 can (16 oz.) lima beans, drained
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • Dash of sugar

Directions

  1. In large skillet cook bacon until crisp; drain on paper towels, then crumble.

  2. Pour off all but 2 Tbsp. fat. Add onion and beef and saute, stirring, until onion is tender and meat is browned.

  3. Add broth, corn and lima beans. Season with salt, pepper and sugar. cover and heat through. Serve in bowls; sprinkle with bacon.
