Bacon, Cheese and onion Cornbread

Ingredients

  • 1 Tbsp. butter
  • 1 tsp. olive oil
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 4 Tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. ground chile pepper
  • 1/2 tsp. ground cumin
  • Generous grind of black pepper
  • 1 cup buttermilk
  • 1 egg, lightly beaten
  • 1/4 cup buttermilk
  • 1/2 cup diced green onions (white and green parts)
  • 1/2 cup diced cooked bacon
  • 1 cup shredded sharp cheddar cheese

Directions

  1. Heat oven to 425 degrees.

  2. Place the 1 Tbsp. butter and the olive oil I’m a 10-inch cast-iron skillet. Place skillet in oven until butter melts. Swirl to coat.

  3. Meanwhile, in a mixing bowl, combine the flour, cornmeal, baking powder, salt chili pepper, cumin and black pepper. Whisk in buttermilk, egg and melted butter, mixing until just combined. Stir in green onions, bacon and cheese.

  4. Transfer batter to hot skillet. Bake 20 to 25 minutes or until golden brown and cooked through.

  5. Cool in pan 5 minutes, then invert onto a cutting board. Serve warm or at room temperature.
