Bacon Corn Bread with Flavored Butter

Ingredients

  • 4 slices smoked bacon
  • 1 1/2 cups corn meal
  • 1/2 cup all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. butter, melted
  • 3 eggs, lightly beaten
  • 1 cup buttermilk
  • 1 cup corn kernels (preferably fresh)
  • Flavored Butter:
  • 1/4 lb. butter, softened
  • 2 tsp finely grated orange zest

Directions

  1. Preheat oven to 400 degrees. In a well-seasoned cast-iron skillet, fry the bacon until crispy. Remove bacon, crumble, and drain on paper towels. Save 1 Tbsp. bacon grease.

  2. Mix together cornmeal, flour, baking powder, baking soda, salt and sugar. When well mixed, add melted butter, eggs and buttermilk and stir lightly. Add crumbled bacon and whole corn kernels.

  3. Swirl bacon grease around bottom of skillet and coat side using a small basting brush. Pour batter into skillet and bake for approximately 20 minutes. The top should be light brown with the edges darker. Serve in wedges with orange butter on the side.
