Bacon-Wrapped, Stuffed Turkey Breast Tenderloin

Ingredients

  • 1/4 cup butter
  • 1 1/2 cups chicken broth
  • 1 (6 oz.) box cornbread stuffing/ dressing mix
  • 8 to 10 slices bacon
  • 1 (30 oz.) pkg. turkey breast tenderloin, rinsed and patted dry

Directions

  1. Heat oven to 350 degrees.

  2. In a small saucepan, bring butter and chicken broth to a boil over medium heat. Remove from heat, stir in stuffing mix, cover and set aside.

  3. Arrange bacon slices on work surface and weave into a lattice.

  4. Place tenderloins between two sheets of plastic wrap and using a meat mallet, pound to an even thickness of about 1 to 1 1/2 inches.

  5. Arrange flattened tenderloins, arranged side-by-side to create a rectangle shape over bacon

  6. lattice. Spoon about 1/3 of the stuffing down the center of the tenderloins.. tie the turkey with kitchen twine to create a uniform roast an to secure the bacon.

  7. Place turkey seam side down, on a roasting rack set in a roasting pan and bake, 45 minutes or until meat reaches 165 degrees.

  8. Transfer to a carving board and let rest for 10 minutes (the internal temperature will rise 5 to 10 degrees during this time). Remove the twine nd carve into 1-inch slices.
