Baked Custard

Serves 5 people

Ingredients

  • 3/4 cups milk
  • 3 eggs
  • 1/4 cup granulated sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • Nutmeg

Directions

  1. Measure milk into a 1-quart glass measure. Microwave on high for 3 to 4 minutes or until almost boiling.

  2. Meanwhile, place remaining ingredients except nutmeg in a medium bowl; beat with a rotary beater.

  3. Slowly add hot milk to egg mixture, stirring constantly. Pour mixture into five 6 oz. custard cups, filling each about 3/4 full. Sprinkle with nutmeg, if desired.

  4. Arrange cups in a circle in the microwave. Microwave, uncovered, on medium power for 10 to 12 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving. Or refrigerate and serve chilled.

  5. Tip: Custard may cook at slightly different rates. Check during the last three minutes of microwave time and remove individual custards as they finish cooking.
