Baked Flounder

Ingredients

  • 1 (3 to 4 lb.) flounder, dressed
  • Salt
  • Cornmeal
  • 3 to 4 slices bacon, cut in small pieces
  • 6 medium white potatoes; sliced thin
  • 1 small onion, sliced thin
  • 3 ripe tomatoes, sliced

Directions

  1. Cut gashes across flounder about 1 inch apart; sprinkle with 1 tsp. salt. Sprinkle small amount of sifted cornmeal over fish; place bacon in gashes.

  2. Place fish in greased pan; bake at 350 to 375 degrees for 10 minutes. Remove from oven; place potatoes over and around fish. Place onion over potatoes; sprinkle with salt. Cover; return to oven for 20 to 30 minutes or until potatoes are tender.

  3. Place tomatoes on top; reduce heat and bake slowly for 30 minutes. If desired, 1 can tomato soup plus 1/2 cup water may be substituted for tomatoes.
