Baked Flounder Amandine

Ingredients

  • 1 medium onion, thinly sliced
  • 1 bay leaf, crumbled
  • Pinch of thyme
  • 1 1/2 lb. flounder fillets
  • 1/2 cup whole almonds
  • 6 Tbsp. soft butter or margarine
  • Grated peel of lemon
  • 3/4 tsp. paprika
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Directions

  1. In bottom of greased shallow baking dish, place onion slices, bay leaf and thyme; place fillets on top of seasonings.

  2. Blanch almonds in boiling water; remove skins. Chop coarsely and mix with soft butter. Add remaining ingredients to almond mixture; spoon over fish.

  3. Bake at 350 degrees for 20 to 25 minutes or until fish flakes easily when tested with fork.
