Baked Haddock

Ingredients

  • 1 lb. haddock fillets
  • 2 Tbsp. lemon juice
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. flour
  • 1/4 tsp. nutmeg
  • 1/4 tsp. paprika
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 3 oz. can chopped mushrooms
  • milk
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Place fish in greased dish; sprinkle with lemon juice. Melt butter in saucepan. Stir in flour, nutmeg, paprika, salt and pepper. Drain mushroom juice into a cup; add enough milk to measure 1/2 cup. Add to flour mixture. Cook over slow fire until thick. Pour over fish. Sprinkle with mushrooms and cheese. Bake, uncovered, for 30 minutes at 350 degrees.
