Baked Haddock with Celery Dressing

Ingredients

  • 1 1/2 to 2 lbs. fillet of haddock
  • Salt and pepper to taste
  • 2 Tbsp. lemon juice
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 3 Tbsp. butter or margarine
  • 1/2 cup chopped parsley
  • 1 cup soft bread crumbs
  • 1/2 tsp. sage
  • Hot water
  • 1/4 cup dry bread crumbs
  • Paprika

Directions

  1. Arrange half the fillets in a greased shallow pan; sprinkle with salt, pepper, and lemon juice.

  2. For dressing, mix together celery, onion, and butter. Heat to melt butter. Remove from heat; add parsley, crumbs and sage. Toss to mix well.

  3. Add enough hot water to moisten slightly. Spread dressing over fish arranged in pan and cover with remaining fillets. Sprinkle top with salt, pepper, dry bread crumbs and paprika.

  4. Pour 1/4 cup hot water into baking dish and bake at 375 degrees for 25 to 30 minutes. Serve hot.
