Baked Halibut with Cashew-Crumb topping

Ingredients

  • 2 tsp. vegetable oil
  • 3/4 cup dry bread crumbs
  • 2 Tbsp. freshly grated Parmesan cheese
  • 3 Tbsp. chopped fresh parsley
  • 2 Tbsp. chopped cashew nuts
  • 1 Tbsp. fresh snipped tarragon; or 1/2 tsp. dried tarragon
  • 1 tsp. grated lemon zest
  • 12 tsp. paprika
  • Freshly grated lemon zest
  • 1/2 tsp. paprika
  • freshly ground pepper to taste
  • 4 small halibut steaks or fillets (about 1 1/2 tp 2 lbs. total)
  • Lemon wedges for garnish

Directions

  1. Preheat oven to 425 degrees.

  2. In a small bowl, stir together all ingredients except halibut and lemon wedges.
  3. Place fish in 4 individual 4 × 5 inch gratin dishes lightly coated with cooking spray or oil. Spread crumb-nut mixture on top of each fish.

  4. Bake until fish flakes and top is golden, 10 to 12 minutes. Serve with lemon wedges.
