Baked Halibut and Rice

Ingredients

  • 3 Tbsp butter or margarine
  • 1 medium onion, chopped
  • 1 cup thinly sliced celery
  • 1 cup thinly sliced carrots
  • 4 Tbsp. chopped parsley
  • 1/2 tsp. dill
  • 1/2 tsp. thyme
  • 1 tsp. salt
  • 3 cups cooked rice
  • 1 1/4 cups milk, scalded
  • 3 eggs, beaten
  • 3 lbs. halibut steak, about 3/4 inch thick
  • Salt and pepper
  • 1 Tbsp. melted butter

Directions

  1. Preheat oven to 350 degrees.

  2. Melt butter or margarine in a skillet. Add onion, celery and carrots. Cook over medium heat until tender. Add 2 Tbsp. parsley, dill, thyme, salt and rice. Mix well. Cook until heated. Spoon rice into a greased 13 × 9 × 2 inch baking dish.

  3. Sprinkle fish with salt and pepper. Arrange on top of rice mixture. Drizzle with melted butter. Bake 40 minutes. Sprinkle with remaining parsley.
