Baked Tomato French Toast

Ingredients

  • 3 large fresh tomatoes
  • 16 slices firm white bread, crusts removed
  • 2 Tbsp. butter, softened
  • 12 slices (8 oz.) Canadian bacon or thinly sliced ham
  • 2 cups shredded, sharp cheddar cheese, divided
  • 8 eggs
  • 3 cups half-and-half
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper

Directions

  1. Core tomatoes. Cut off a thin slice from the top and bottom of each tomato. Cut each tomato into flour slices or more; set aside.

  2. In a 15 × 10 × 1-inch baking pan, place bread in a single layer, cutting to fit if necessary. Spread butter om one side of bread slices; turn slices over so butter is on bottom. Arrange Canadian bacon or ham over bread; sprinkle with 1 3/4 cups of cheese; set aside.

  3. In a large bowl, lightly beat eggs with half and half, salt and black pepper; slowly pour over bread and cheese.

  4. Bake, uncovered, in a 350 degree oven until almost firm, about 15 minutes. Arrange reserved tomato slices uniformly over the top; bake until set, about 8 minutes.

  5. Sprinkle with remaining 1/4 cup cheese; the cheese will melt without further heating. Let cool 5 minutes, cut into squares with a sharp knife and serve.
