Baked Salmon and Rice

Ingredients

  • 1 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1 large can salmon
  • 1/4 cup chopped parsley
  • juice of 1 lemon
  • salt and pepper to taste
  • 3 cups cooked rice
  • butter cracker crumbs

Directions

  1. Combine butter and flour; blend well in a skillet. Add salmon liquid, lemon juice, black pepper and salt. Combine with flaked salmon.

  2. Put layer of boiled rice in greased casserole; add salmon mixture then remaining rice. Sprinkle buttered cracker crumbs on top. Bake about 30 minutes at 350 degrees until crumbs are lightly browned.
