Baked Shrimp

Ingredients

  • 1 lb. uncooked shrimp, shelled and deveined
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • grated rind of 1 lemon
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. honey
  • 2 Tbsp. soy sauce
  • pinch of cayenne

Directions

  1. Combine shrimp with the remaining ingredients in a baking dish 9 × 13, stirring to make sure the shrimp is coated. Cover and marinate in the refrigerator at least 2 hours.

  2. Preheat oven to 450 degrees. Bake, uncovered, 10 minutes, stirring once. Serve with rice.
