Banana Cream Pie

Ingredients

  • 2 cups heavy cream
  • 2 large eggs
  • 1 cup sugar
  • 1/2 vanilla bean, split lengthwise
  • 3 very ripe bananas, coarsely mashed
  • 1 9-inch graham-cracker crust
  • Dash of bourbon
  • 1/2 cup toasted, slivered almonds

Directions

  1. In the top of a double boiler over medium-low heat, whisk together 1 cup of the cream, the eggs, and 1/4 cup of the sugar until blended. Add the vanilla.

  2. Cook slowly, gradually adding the remaining sugar. Stir until the mixture thickens enough to coat the back of a spoon. Remove from the heat; discard the vanilla bean. Fold in the bananas and cool for 15 minutes. Spoon into the pie shell and chill for at least 30 minutes.

  3. In a bowl, beat the remaining cream with the bourbon until stiff peaks form. Top the pie with the whipped cream and sprinkle with almonds. Serve immediately.
