Basic Crepes

Ingredients

  • 1 1/2 cups flour
  • 1 Tbsp. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups milk
  • 2 eggs
  • 1/2 tsp. vanilla
  • 2 Tbsp. melted butter

Directions

  1. Measure flour, sugar, baking powder and salt into a bowl. Stir in remaining ingredients; beat until smooth.

  2. Heat until butter is bubbly. Pour a scant 1/4 cup batter into the pan. Quickly rotate the pan until batter is evenly distributed on the bottom of the pan. Cook over medium-high heat 30 seconds, until the underside is slightly browned. turn over and brown the other side, about 15 seconds.

  3. While warm, spread with applesauce, jelly, jam or sweetened strawberries. Roll up and sprinkle with confectioners’ sugar.

  4. makes 16 crepes
