Basil Shrimp Vermicelli Toss (healthy.for 2/ quick)

Ingredients

  • 2 oz. whole grain vermicelli or thin spaghetti, broken into thirds
  • 6 oz. shelled, deveined, uncooked large shrimp (21 to 30 count)
  • 1/2 cup packed fresh spinach, coarsely chopped
  • 1/2 cup grape tomatoes, quartered
  • 6 pitted Kalamata olives, coarsely chopped
  • 2 Tbsp. opine nuts, toasted
  • 2 Tbsp. chopped fresh basil
  • 2 tsp. extra-virgin olive oil
  • 1/2 tsp. minced garlic
  • 1/8 tsp. salt
  • 1/8 tsp. crushed red pepper
  • 1 Tbsp. grated Parmesan cheese

Directions

  1. Cook pasta according to package directions. Add shrimp during last 3 minutes of cooking, cook until shrimp turn pink. Drain well.

  2. Toss hot pasta, shrimp and all remaining ingredients except cheese in large bowl until spinach is slightly wilted. Serve topped with cheese.
